I care most about the head tube angle and the amount of fork rake as that is what determines how stable a bike is on downhill sections of road and how easy it is for the rider to control the bike. Standover height makes no sense as a key criteria for a bike ridden on pavement and I say that as a guy. I have never been able to stand over any of my road bikes with both feet planted on the ground.

A "endurance" bike will have a longer top tube as compared to the seat tube length but more importantly it will have a less steep head tube angle and forks that provide more rake.
