Does the Mavic have a shell size (Italian, BSA or French) based on how thick it is?

nothing like that is marked on it. Velobase's entry doesn't refer to there being multiple versions of this bottom bracket, so I think it's compatible with all three standards due to the way it works. that said, I'm not an expert on these and have never installed one.

I have had bad luck with Campy Centaur sealed bearings. Are the cup and cone Campy Strada bottom brackets better sealed against water?

the Campy strada BB’s have their own plastic covers to protect against water. That said, in my experience, sealed bearing systems are generally more waterproof than unsealed, so I can’t guarantee they would be an upgrade from the Centaur BB you had. Maybe consider one of the Phil Wood BBs - those use sealed bearings.
