My smallest sprockets are 11 and 12, biggest chainring is 46 on my derailleur touring bikes. I only use my two highest gears (115.5 and 105.9 gear inches on my light touring bike) on shallow downhills. I could lose the 11T without too much agony, but I would not want to lose the 12T too. I do not spend much time on those shallow downhills but I like to keep pedaling instead of coasting a lot of the time in hilly terrain.
My cadence is only rarely above 78. People with a hummingbird cadence, I can see them only using lower gears but not me.
