We had a good ride. The course and pace were a bit faster than ideal, but we stayed together and no one got dropped or butthurt.

Well, then you're in luck! It's probably 6 speeds, with indexing!

Also 126mm spacing and being aluminum, no safe way to spread the stays.

Speaking of which, i’ve have already started thinking about Christmas this year. Besides a couple more thermal bibs, and maybe one more thermal jersey or base layer. I’ve been thinking A, 105 11 mechanical for the ritchey. Depending on how much the price drops, B. Super team wheels for the Ritchey. Thinking 35-45 mm deep. C. Power meter for the Ritchey, Single side pedals D, Easton carbon bars for the Cervelo. E, A spare set of superteam wheels for the cervelo.

Based on 500 miles experience with mechanical Ultegra/rim brakes and ~2500 miles with mechanical 105/discs, I'd say the new 105 mechanical groupset for the Ritchey is definitely NOT stupid.

And probably should, since it's not a match, AFAICT. Should be 1055 generation 105. That's some kinda Campy.

Do what I did for the R8000 - buy it piecemeal and never total it up.

Sounds expensive, but I guess I don’t actually need brakes, and I have a spare 11 speed cassette. So I really just need, chain rings, cranks, derailers and shifters.
