I am happy with the GRX, definitely. The build quality is sturdy, and a bit stiffer at the cranks than the original setup. I am sure the rest of the lineup is nice, but. I didn't see the need to drop a ton of extra cash "upgrading" other things on the bike that are perfectly adequate for me.
If you wanted to to put full 10 speed on your rig, it is perfectly feasible, and you would also need the new GRX STI levers as well as the rear derailleur. A new 10-speed cassette would be needed and would fit on your existing wheel freehub without issue.

After a few years it was time to upgrade from my 44cm EA70 to something wider with more flare in the drops, but still straight in the hooks so my levers weren't pointing funny directions. My test ride makes me wish I had swapped sooner.

New Pedal Day
DMR V-Twin pedal for my Spez Diverge, quite weighty but they provide lots of customization in the forms of shims and pins to clipped your feet better on the pedal. I don’t use them yet, found them easy enough to clipped and unclipped just without and the platform is comfortable enough for randonneuring.

If you like these, try the Terreno Drys. Every bit as fast but a bit more versatile and better traction on gravel. I have about 100 miles on a set of the Drys in 650b and they are really fast and offer a bit more grip in light mud/sand/gravel.

I just like trying new and different things, plus they were not much more when I purchased them. $230 shipped for the pair on ebay from a US seller. Last I looked TRP's come singly and about $100 each(?). I like them better than the HY/RD's on a bike I borrowed now that I have ridden with them for a while . It even had compressionless housing, whereas mine just has the factory Jagwire LEX.

I bought juin f1 brakes for my recent gravel build because they are smaller, lighter, and less expensive compared to the hyrd calipers.
Trifecta right there.
The hyrds were $110 more and significantly larger in size.
They work great so far. I want to slow down and they slow me down. I want to stop and they stop me. Pretty straight forward.

i bought brake pads one set for my TRP HY/RD calipers. I need to buy a second set to have spares ready. I also bought an origin 8 stub to add a light for winter commuting on the side of my fork.

I replaced my worn 700x45 Riddlers with the 45mm Ramblers this spring...loved the Riddlers, just wanted to try something different. Both tires are great, I think for my gravel riding 45mm might be the ideal width.

Check out the Velomine website. They seem to have good deals on wheels and even though some may be 15mm thru axles you may be able to get an adapter or different end caps.

This is the part where I charge headfirst into what is most likely a really, really bad idea.
RX800-series hydraulic disc brifters for 1x11 mechanical drivetrain.
GRX810 (2x11) rear derailleur.
And an 11-32 cassette to go with.
A nice shiny modern Dura-Ace box...

Overhauled the Journeyman this week. Installed a new Shimano GRX FC-RX600 46/30t 172.5mm crank with BB-RS500 bottom bracket. Also put on the FD-RX400 GRX 10 speed front derailleur with a braze-on band adapter. Chain is a new KMC rustbuster 10 speed eco. All new cables and full housing run internally. Also overhauled the shift levers and wheel hubs for good measure. Still running the original 9 speed Sora STI levers and rear derailleur. Purchased the 650B wheelset and Panaracer 650x48 Graveking SK a few months back
Oh, and don't forget the Cinelli blue cork bar tape.
Ready for the winter!

Installed a set of Vee Rubber Speedster 26x2.125" tires today. I turned my old Trek 920 into a budget drop bar gravel bike for when I want fat tires instead of a third wheelset for my Jamis, but I have found the pickings are slim for decent, affordable, tubeless 26" gravel appropriate tires. First ride impression is mostly positive, with a bit of annoying self steer at low pressures being the only negative.

Today I took advantage of the REI 20% coupon to add a new Kuat NV 2.0 rack to carry my Niner to far away gravel. I’m very impressed with the quality and ease of function on the Kuat. It’s rock solid with zero wobble.

More Tires: Spesh Fast Trak 650b (27.5) x 2.0
On the 30mm rims the casing stretches to 54.5mm at 40 PSI. I am heavier so that pressure is typical. I might play around with my tire pressures to see how low I can run w/o being too inefficient on road.

Shininess starts with the bottom bracket. If the bottom bracket isn't shiny, the bike will never look shiny. Probably. Better safe than sorry, right?
