OK, well, for me, just the thought of a brown saddle with black hoods is setting my teeth on edge- that would bug me to no end. But whatever work for you .
I will recommend the Serfas woven tape:

I have this pattern on one of my bikes and it is really comfortable. It resembles Newbaum's in both thickness and texture (but somehow better- I tried Newbaum's for a little while and just didn't like it at all). Seems like this would tie in the black of the hoods and one bag, the blue of the bike, and it looks good with green (the bike it's on for me is British racing green). It's possible that the clash with the brown wouldn't be as grating with the slight addition of the yellow/brown stripe in the tape.
There's a bunch of other patterns as well, if this particular one doesn't do it for you, but you still want to have some fun.
And yes, the price is a bit steep, but it wears well and lasts a long time.

If I went with gum hoods then I would probably keep the ACE bandage brown since it does look cohesive. A black saddle may be in the future, but this one is comfortable enough to not warrant changing except for weight reduction reasons.
What about something a bit out there like purple or green?

Seatposts and saddles are the same in both pictures now.
The black hoods are kind of a necessary evil if I want modern non-aero levers. The only ones I know of with gum hoods are the TRP RRL but I'm having a hard time with the grey plastic on those. I know it's probably fine but it just doesn't look very good. I haven't quite decided but the short list is the aforementioned TRPs with black hoods and silver levers or the IRD drillium levers with silver levers.
Thanks for the link to the Serfas tape, that definitely looks interesting. And $30 isn't too out of line so long as that's enough to wrap the entire bar.
The more I think about it the more I agree. I swear one time I saw a similarly styled bike with purple cotton tape and I absolutely loved it, but I can't remember what the rest of the bike looked like.
