I made sourdough bread every week for years. I let the very slack dough rise in a cool basement for 24 hrs. Kneaded if minimally, proofed it in a linen-lined basket and baked it in special pans over a pan of water, all to get that palate-lacerating crust and the chewy “country” crumb with the big bubbles and I never got the taste or the texture quite to where I wanted them. Then LSS found a quick and dirty recipe for a commercial yeast bread cooked in a closed Dutch oven. In two hours, it yielded a restaurant quality bread with a beautiful, soft interior, golf ball size bubbles and, and crust like an asphalt shingle. I just gave up.
