Such would appear to be the case, as far as a quick scan can tell. Not surprising, since the process is similar and depends on naturally occurring (as opposed to introduced) bacterial flora.

I can't be bothered to eat things I don't like because they MAY have health benefits based on a bit of handwaving and a bit of anecdotal evidence, but if it tastes good and may have benefits, I'll be all over it. So give me kimchi, and keep your sauerkraut!

Our family plans got rained out this afternoon, so we had to come up with some alternatives. After dinner, it had mostly stopped raining, though it was still windy and cool. The wife wanted to take the kids out to pick up desserts and then I had the bright idea of taking them over to a viewing area at the airport to eat said desserts and watch some planes.
I had happened across the viewing area while on the bike ride today and thought that the kids would get a kick out of it; it's just a mile-long access road that leads to 15-20 parking spaces and a couple picnic tables, but it's close to the some of the action. I was right - the boy, in particular, was bouncing all over the place. In our time there, we saw two planes land and another 8-10 take off, mostly medium-sized passenger jets. I think that we lucked out with the wind direction, too - the runway closest to us had the headwind, so a lot were taxiing over to take off from it.

I like it on a lot of stuff, but I'll eat kimchi straight, too. I need to pick up some more soon.

There is a restaurant right on the runway of an airport here. You can watch the planes and listen to the tower with headphones at the booths. It's WW1 themed and in the waiting area you can hear a squad leader briefing his pilots for the day's mission behind a locked door. Outside it looks like an old French Chateau and there are military vehicles rusting away.

I used to make it in quart canning jars in my back-to-the-land days. Quite simple really. If it goes bad, you smell it. Also made it in five gallon crocks.

Here is a pic of the new car. If you look closely, you can see the Saturn on the other side.

And those tail light lenses are $350 apiece. Here anyway. No aftermarket, and few in junkyards. I used a plastic red lens and some tape

As I recall, you pack the cabbage and salt tightly into the jar and leave the lid cracked so the air can escape. That's pretty simple. I ought to start it up again.

Out of high school, I used to go camping/canoeing for a week each summer with a group of friends. ****ting in a hole in the ground is never fun, but you do what you've gotta do... unless you're my friend John. One year, he went the whole camping trip without taking a dump. Getting to a real bathroom after the trip is always a highlight, but it held special importance for John that year. As the rest of us were enjoying our first hot shower in a week, John was taking care of business. When he was done, he was so impressed that he had to call us all in to see his creation - I swear that thing was the size of a grade-school child's arm.
