Campagnolo 10s Shifter, Shimano 7/8s RD & Freewheel?
Will a Campagnolo 10s shifter index a Shimano 7s and 8s RD and freewheel without any modifications or Shiftmates?
If I'm reading the below correctly, the C10 shifter will pull 2.8mm and the S7 was 2.9mm, the S8 was 2.8 mm, so both should work - correct in theory? In practice?
I'm particularly asking about the C10 shifter - S7 RD & freewheel combination. The bike in question has unusual hubs that I want to keep, and there are no parts like longer axles available, so I may not be able to go from the current current 7s freewheel to a 8s.
If 8s will work but 7s will not, suppose I got a Suntour Ultra freewheel?

I think you are confusing terms.
A shimano 7-8 speed shifter pulls the rear jockey wheel cage about 4.8mm to 5mm. The campy 10 speed shifter pulls the jockey wheel cage about 4.15mm. That difference is an extreme amount. No way a 10 speed campy shifter could work well with a 7-8 speed system without major alterations or shiftmates or other hacks.

The Campy 10 speed shifters will work with Shimano 8 speed cassette and RD. Not 7 speed, per the CTC site.

That's in an all C or all S system, right? I'm talking about mixing C10 shifter w/ S rear dérailleur on a S7 or S8 freewheel.

The way I read that article, you can use Campy 10S shifters with a Shimano rear derailleur on a Shimano 8S freewheel. AFAIK, all 7S cassettes have 5mm pitch, so the SunTour should be the same pitch. You could try to find a Campy 8 speed shifter or use a Shiftmate.

When the right side DT shifter is all the way back (largest cog), and I am standing, I tend to hit the shifter with my knee. Which slaps it forward several clicks (toward the smallest cog). When you consider the circumstances in which you have painfully heaved yourself upright whilst in the largest cog, you can appreciate that when this happens, it is a disaster, at least for your forward momentum and spirit. I could try bar-ends, but on this bike I'd hit them with my knee too. The bike is rather small for me, kind of like a modern roadbike fit rather than the French fits I usually ride. But I really do like it.

SunTour made a downtube shifter that actually sits on top of the downtube. I think these were the LD-3800 Cyclone shifters. It might be difficult to find these, especially with a band, but that should solve your problem.

If you have a 7 speed freehub, rather than a freewheel, here's another solution that will allow you to keep your hub unmolested. Campy 11 speed shifters will index Shimano 9 speed cassettes. 8 cogs of a 9 speed cassette will fit a 7 speed hub. Google "8 of 9 on 7."

My current setup is Campy centaur 10s shifters, Shimano rear derailer, Shimano 7spd cassette using spacers stolen from an 8sp cassette.
Shifts perfectly, and much more ergonomic than the bar end shifters It replaced.
Shimano doesnt currently make a 7spd brifter, so campy 10spd ergopower was the best solution for me.
Note that there is a very slight spacing different between 7 and 8 spd shimano. I didn't bother trying it with the original 7spd spacers since online notes claim 8spd is what works; but I suspect it would still work, just not as smoothly.
Try and see, if you have a freehub (not freewheel) you'll have more options
