I think a Brooks cambium would look good on it with some black leather bar tape. The most important thing is you get fit for saddle width. Your current saddles may be too wide or too thin

An hour or two of TLC to that drivetrain would be a great start. There are also some aesthetic tweaks I would do (black bar tape & saddle, silver setapost) but that's a personal preference thing.

Looks quite good to me. If you regularly climb steep stuff or ride in the mountains, you might want an inner chain ring smaller than the 42 tooth ring now in place. Looks like a sweet ride.
