TRP Spyke or Spyre (MTB and road respectively) are good calipers if you can find them.

It depends how you ride - 30/36 on 700C at 80 rpm is about 5 mph, you might want to go lower. I'd more likely be doing 50 rpm which is 3 mph, any lower I might as well get off and push.
