I'd echo what folks in here have mentioned--the early Centurion Pro Tour rides very sports-toury. If I was to rebuild my Petaluma-built, pre-QBP Salsa La Cruz differently it would also be light & spry enough to fit this category (though it's more fun as a 1x monstercross).
To Bianchigirll's comment--there are definitely Randonneuring and Brevet events across the US, even if a bit niche, and those are probably where OP would find boutique/custom/French-inspired sports-tourers that fit the definition.
