you’re the guy I was thinking of.
using 35mm tires, and with a combined weight of about 380lbs, what inflation should I use as a starting point?
being limited to canto/V-brakes, what’s the hot setup? I plan on ordering new swissstop pads, but is there a canti/V that is superior to all others?

Of course not. And all my other bikes and tools etc are Shimano so more likely to get Shimano. Would not be doing this for another year (or two) so plenty o’ time to ruminate.

Our bike is 340 lbs and running 37mm tires at 65 rear, about 57 front.
Not sure what the best drop bar V's are, since we have flat bar. For canti's I like vintage Shimano paper football lookin' XTs (slight possibility they might snag your stoker's heel some of they have big feet)

It’s been a long time since we had rim brakes but we just used whatever was available. It is imperative that you keep them properly adjusted and running close. You can run out of lever quickly on downhills if you run them too wide.

edit: with a 34 out back I would probably be happy with the 50x34 up front even if I found myself in the Eastern Sierra Nevadas.
