For my gravel road bike Lemond, gonna try some Vittoria Terreno 31mm after my rear 30mm Kenda Kwick gives up the ghost. Fingers crossed they'll fit (some 32s have rubbed, some have cleared, a 31mm could go either way also)

I'm running the Schwalbe Pro 1s at 80# front and rear and I weigh 205#. I shoot for 78 front and 83 rear but take anything ~80 when I'm pumping. Both ended up at 80 today.

I think I'm heavier than you. Currently 185. Hope to get to 176 or so this year.
Like more things, I think that "it depends" is the right answer. I was completely sold on the Schwalbe G-One Speed (30mm), but then I lost a bit of weight and tried some 28s. I could feel the weight difference and didn't give up any comfort. They're now my go-to.
I'm running my 28s at ~58f/62r. My rims are pretty wide, internally, though (23mm).
30mm is the actual sweetspot for road tubeless, IMO.

Sounds about right but if you have surprise gravel, are you getting pinch flats? That's why I push my PSI a smidge higher.
On yesterday's ride we had 1 mile of surprise gravel and another rider had a pinch flat. Sad!
