when i haven't had an extractor or the bolt was too small, i use a dremel with a small cutting bit to turn the rounded hex or phillips into a deeper flathead, and then unscrew. deeply unsatisfying...

re: your stripped Allen bolt. I would consider grinding the end of an Easy-Out so that it has to be hammered into the bolt. This will allow the use of a much bigger Easy Out than if you drilled a hole in the bolt.
If only one of the bolts is stripped it might help to tighten the other bolt to remove some of the tension on the bad bolt.
You might get lucky trying a Torx bit.

yeah, you only need access to the top to turn it into a flathead, if the fastener is big enough.
but if one doesn't have one of these, probably easier to obtain the correct extractor. i've just found extractors really hard to use on small bolts, whereas hex cap heads often has enough "meat" to operate on.

I was thinking of grinding an extractor like this until it has to be hammered into the hex. Probably get a lot more torque on it than if you cut a slot in it and tried to use a flat head screwdriver.
