Considering that this call for first-hand accounts has gone unanswered, I will share a bit about my experiences. My first exposure to a nonprofit bike organization was the Iowa City Bike Library. The Bike Library is located in Iowa City, IA (it has relocated to a different space since my time volunteering), and is run by volunteer steering committee members and one paid Americorps volunteer. In my years of semi-frequent volunteering with the organization, it was brimming with donated bicycles, parts, and know-how. Donations were evaluated by mechanics and are either repaired for check-out or stripped for parts. The organization prides itself in recycling all unused materials, and has rehabilitated many bikes which otherwise might have reached the end of their functioning life. Here's a video from a 2012 celebration.
Since moving away from Iowa City, I have also volunteered twice at the Recyclery in Rogers Park (Chicago), and five or six times at Working Bikes in the Lower West Side of Chicago. Neither organization is very close to where I live, now, so unfortunately I am no longer an active co-op volunteer. If you have particular questions about operation of any of these groups or the types of bikes I worked on when volunteering or anything else, feel free to ask!

The Bike Library and Workshop on the campus of the University of Alberta in Edmonton, Alberta.

This is not a co-op. It is supported by the Students Union of the University of Alberta under the group Sustain SU. The Bike Library is part of a broader sustainable life style initiative.
The Bike Library was started in 2005. Initially they loaned bicycles to people at no cost, hence the name library. Currently the Bike Library rents restored old bicycles that are donated. Sustainability means trying to reuse and not purchasing new items.
The Workshop is used to maintain the bicycle rental fleet. The Workshop is also open several hours a week to everyone to come in and work on their bicycles. It is a DIY bike shop with a mechanic and volunteers to give guidence on what and how to fix on your bicycle. Use of the bike stands and tools is free. There is a selection of used parts and some new parts.
There are many bicycle commuters travelling to the campus and this workshop is well used.

Co op in CT
I've been Volunteering at The Bradley Street co-op in New Haven CT for the past month and a half. I know there is also one in Hartford. Bradley Street is great fun so far, everyone is amazing and inclusive. My confidence as a budding mechanic has gone up and they are well stocked in tools and bike donations from the community to work on and learn from. There are plenty of precautions due to the virus restrictions so the owner keeps a limit on volunteers in the space with plenty of seasoned mechanics to help you out.
