Why are cycling jerseys so short?

I went to check the brands and sizes but mostly they are worn off. The newer ones, Grateful Dead and Police are Profile Designs in a large. That's about all I can discern beyond the Giordana one, which is one that fits well. I guess I should look at those. Also, the rock jerseys were father's day gifts from my kids, so who knows where they got them. (They're all adults, so my wife didn't do it for them.)
I guess it is just time to buy a few more. Shorts too, they are getting a little stretched out.
And yes, by "shrunk" I mean that I've grown more round over the years. I'm surprised I have to explain that..

i have grumbled over the same thing for years. To teach companies a lesson, I may just go without a top & just put nip covers on.

You should come to Seattle for the annual Solstice Parade. The hit are the naked cyclists and there are tons of them - usually in body paint. You’d fit right in.

If a size Large jersey is too short for you at 5'7", I think this is probably a personal preference issue -- you like 'em long. No way is your gut big enough to account for this.

Just to come back and answer the OP question...
Primal seems to make jerseys in more normal sizes that we'd expect here in the USA. Our annual organized ride here in May uses them to supply jerseys and I have many of them from those rides. Their sizes run larger than other brands of jerseys I have. And they are well made.

My son likes their bibs, but they seem to be plastering their name in big letters on them lately. Though my son's bibs don't have the brand name displayed loudly. Maybe he found some models that don't do that.

They run the gamut from SM, MD, LG, XL, 2XL, and 3XL. So yeah I'd think husky is in there. Seem like a lot of the 2XL and 3XL run out quick. Not sure if that's a reflection of our S.A.D. or that they just don't make as many in those sizes.
I'm just happy to wear a MD! Though when I was closer to 200 lbs the LG still fit nicely.

Garneau Lemmon 2 jerseys are my favorites with shorts rather than bibs for everyday road bike and casual rides with baggy shorts. The material is high tech wicking poly but feels like fine cotton. Comfy, long enough for my long waist, and stretchy. No bare midriff, nobody is gonna mistake me for doing a Will Ferrell sketch on a bike ride.
It's no longer made but still available as new/old stock from various outlets including Amazon. Bargains at $20-$30. Can't vouch for the original Lemmon or newer Lemmon 3, haven't tried them.
If the Lemmon 2 jersey has any flaw, it can take a "set" after stretching out in length after I've overstuffed the pockets a ridiculous amount for centuries and long casual group rides. Like, stuffing a spare folding tire, tools, three or four bananas and snack bars, cell phone, first aid kit in a quart ziplock baggie, etc., in the various pockets. My first Lemmon 2 jersey, bought around 2017 or so, in size medium, now hangs about an inch longer (empty pockets) than my newer Lemmon 2 in medium that hasn't been overstuffed -- yet. Washing in hot water seemed to have reset the length a bit shorter. If the label didn't confirm it's poly, I'd swear it's cotton or ultra-thin merino wool. I'm really surprised I haven't worn holes through the fabric but it's incredibly durable, considering how soft it feels.
It's not the most snug fitting fabric, but it's not flappy either. And incredibly comfy in murderously hot, humid weather. By far the most comfortable jersey I've found for Texas weather, other than winter. And I've even worn it as a sort of baselayer in winter under a long sleeve warmer or thermal jersey for winter rides that start out freezing at dawn but warm up to the 60s-70s later.
I have a few short waist aero jerseys that need to be worn with bibs, but only wear those for really windy rides or when I feel like chasing a PR on Strava. That fabric doesn't stretch a bit, and the pockets are vestigial, just enough for a smallish cell phone, a couple of gels, etc. I've worn those maybe two or three rides the past year. I've got a couple of Altura jerseys which are rather short, but these are both road specific. I don't know why it should be but it seems that my mountain biking jerseys are longer than road biking ones. The Altura ones are particularly annoying because it's so hard to get into the pockets.

In addition to the size range, I think that a lot of apparel made or intended primarily for the American market is uh, vanity sized. IOW, an M in this market is sometimes more like an L or XL in others.

As I've aged, all of my jerseys have "shrunk", which wouldn't be so bad except that they are all so short. Even the new ones I've bought in a larger size seem to be too short. I don't like bib shorts so having jerseys that are too short are just not a great look from behind. I'm only 5'7" so it isn't like I'm extra tall or anything. Even when I lost a lot of weight too they left a gap. And if they are short in the back you can imagine what the front then looks like. I don't want to gross anybody out by posting pics.

Fortunately, I do most of my riding on my trainer in my basement, so only my cats (and occasionally my family if they happen to be downstairs) get exposed to my jerseys if they are short.

I know they say my hips where the waist band sits is suppose to be bigger, they really aren't. Sadly that's my waist size too. We all have been desensitized to what our real measurements are by decades of such conditioning.

I've never found any jerseys to be too short, not even the ones that are too tight. Generally, I find them too long.

I'd like to see a photo of the OP in one of his 'too short' jerseys. At 5'7" and wearing size L, I have to believe that he just likes his jerseys to be ridiculously long.
