Yes, I do but I try to not mess with anything that's brand new from the factory. If something goes wrong I want a factory trained and approved person to wok on it.
The crotchety old man concept that in 2023 brand new consumer goods should require a complete inspection and adjustment from the end user is insane. Did you inspect the compressor of your refrigerator before you turned it on? The hose clamps on you F550 grocery mobile? It is equally pathetic that you are defending a souless cooperate entity over one of your own, hard working neighbors. Vilify and demonize your LBS. Nice. And when you run those guys out of town? You'll be free to mail order your bikes from direct from the child labor camps to your doors where you can inspect and adjust them to your heart's content. Simps, fanboys and incels.

A few things from my perspective:
1) The bike shop is responsible for properly assembling and tuning the bike, no and's, if's or but's about that. I would be pleasant but firm and tell them that.
2) I agree with another post. No matter how good the bike shop is, some can and do get to the customer without a final check-n-tune. Yours is probably one of those bikes. In my opinion, it is up to the owner to really check it out thoroughly before putting your life on the line riding the bike, but it's still up to the bike shop to deliver a safe build. See #1 above.
3) Brake cable housings don't normally wear through a bike's paint unless they are far too long. Not sure what to tell you on that one. See #1 above and ask them for touch-up paint.
As for Salsa, that seems like a fairly routine answer to me. Once they sell the bike to the shop, they lose control of "how" the bike is used. I agree it would be up to you on how you protect the paint finish.

On many newer bikes with internal cable/housing routing, with entry points just below the head tube, rubbing is sometimes inevitable.

protective film was not applied to the seat before the bike purchase - therefore the color rubbed off
the evidence is very apparent

As an aside it boggles me why bicycles alone are like this. Yeah if you build a bike in a box from Canyon or whoever, you may find a few things you might have done differently or better. But it never occured to me to do the same with, say, a bread machine or a DVD player.
I built 3 kid mountain bikes at Christmas this year and the one from Diamondback was the best assembled and packaged. By a mile

Fasteners loosen, fasteners often loosen shortly after assembly, after being put into use. Every motorcycle service manual says to check fasteners at the first service after break in, which is usually 600 miles. After that they are usually fine.

I could see the comparison if your bread machine or DVD player was 3' x 4' x 2'. Are you running a commercial bakery? I bet someone has to put together Krispy Kreme's doughnut makers in a new store. UPS can have one person handle a home bread maker box, and shipping charges are therefore reasonable. A fully built (adult) bike box takes a couple people to wrestle it, which drives up costs

"Fully-built" is an important factor in pdlamb's comment. Your Canyon (I assume) required some assembly, which allows for a significantly smaller box.
