I remember this myth from my BMX days, but it was for Z-rims (remember those? plastic composite wheels with spokes). I had a buddy who put a pretty warped Z-rim in the freezer for about 2 weeks and he basically ended up with a really cold, warped wheel.

Oh, I also had a BMX bike with steel mags...wow, heaviest wheels ever.
