XDR to Shim 11spd on DTSwiss 350
I have a wheelset with a DTSwiss 350 XDR free hub that I would like to use on my bike that has an 2x11 speed GRX setup with a SRAM 11-36 cassette. I ordered a DTSwiss 11 speed driver and it is just a bit shorter than my current driver and the cassette won’t mount. I’ve looked at the DTSwiss website and they only list this 11 speed driver. Do I need a different cassette? I really like this SRAM cassette and Shim only offers an 11-34. Does DTSwiss make a different driver?

The shimano 11-34 11 speed is made to still fit the old 10 speed road/mtb freehub while the Sram 11-36 isn't.

Mounting a narrower cassette on a wider freehub is an easy fix with a shim. The reverse, not so easy.
Depending on the details, you might let it overhang a bit more, limited by 1st sprocket thickness and lockring thread length. Seeking a narrower cassette may be a problem since index depends on correct spacing.
Before doing anything, I'd confirm that I had the right freehub, since 11s spacing is the same or close for Shimano and Sram.

Is the 11 x 36 SRAM cassette a PG-1130? If so, that could be your problem. At our shop, we tried installing one of those on a freehub body that, even according to SRAM, should have been no problem in terms of compatibility, but it would not work. It's probably been three years since we dealt with this, so I forget the details, but I do remember our customer wanted 11 x 36 gearing on his cassette, his bike was eleven speed, and SRAM was the only option for 11 x 36 in an eleven speed cassette. We ordered a SRAM PG-1170 in 11 x 36 and it worked perfectly, no problem getting it installed on the same freehub.

That should work. Is it possible you got a freehub body marketed for 11SP MTB? That's basically the same as 8/9/10sp, 11 speed road is wider by 1.8mm.
