. . . and bikepacking was born, greatly increasing the definition of ”touring bike.” What was considered strong for road touring would hardly suffice on singletrack.

I don't know alllan, we were touring on mountain bikes well before the term "bikepacking" took off and those same mountain bikes were tough over built critters that could handle single track just fine.

Lots of good ideas. I don't know enough about enough different bikes to answer the question directly, but there are suggestions here to let you answer it.
Road tests by others are one guide, if they didn't break it you probably won't either.
Strong wheels seem to be a theme. That means, lots of spokes, built by a good professional wheel builder. That reasoning also leads to dishless, which leads to a geared hub or gearbox like Pinion. An added advantage is a (probably) more durable chain, which you may need when you stand on the pedals going up a 15% grade with a full load. Probably, 26" wheels give you a little strength advantage. All of these things may be more theoretical than real concerns, but being unworried about the bike is worth something.

If you can pedal a bike up a 15 percent grade with a full load, either (1) you do not need that strong of a bike because your load is very very light weight or (2) you are an olympic class weight lifter. And if you were an olympic class weight lifter, yes a really good chain would come in handy.
