GRX 812 is 1x, has a capacity of 31 which is eaten up by the cogs. GRX 810 is for doubles, and has a capacity of 40 (so 34-11 allows 17t chainring diff max). Yes, Shimano is conservative and some report 810 doing 42t, others are not so lucky. YMMV.

On the low end, I must have 19 inches or less. On the high end 95 inches or more (I might be able to go lower by a touch). I want mechanical disc brakes and do not want bar end shifters. Don't care if it's 10, 11 or 12 speed.
A 1x 38 crank with an 11-50 cassette puts me VERY close to where I want to be. It gives me just over 19" the low side and just under 95" on the high side. If I can't come up with a 2X solution, I'll go this route if I can find compatible components. I can go Microshift XLE 1x11 dynasys drop bar shifters. I'd like to be able to go with higher than Deore level RD, but Shimano doesn't make one that is rated for a 50 tooth cassette. Anyone's gravel or CX crankset should give the right chainline. Problem solved?

I'm mainly just not sure you are going to find a 11-40 rear that works with STI's. Even Shimano's GRX says that the STI's in that group are limited to road type rear DR's which currently have a 34 tooth max. The 11-40 cassette in the GRX group requires a mountain bike rear DR and that will require something other than a STI on your drop bars.
The RD-RX810 intended for multi-ring setups is only spec'd for up to an 11-34, but I know people using it with 11-40 cassettes with reasonable results.
Another option is to use an 11-speed MTB derailleur and a Wolf Tooth Tanpan with 11-speed road-pull shifters.

The RD-RX810 intended for multi-ring setups is only spec'd for up to an 11-34, but I know people using it with 11-40 cassettes with reasonable results.
Another option is to use an 11-speed MTB derailleur and a Wolf Tooth Tanpan with 11-speed road-pull shifters.

You could meet all your requiresments (aside from XD driver, which you can certainly get on a non-boost hub) with an e*thirteen 9-50 cassette and 36t chainring. This could work with Sram eTap AXS road shifters and Eagle RD, or use https://ratiotechnology.com/product/...d-upgrade-kit/ with a 11 speed Sram shifter and a 12 Speed Sram Eagle derailleur.

I have a 42/28 with plain chainrings, and really like it. Expensive, but a really well-executed small BCD crank with lots of options.

GRX 2X FD (Lynskey is shipping the bike with the 2X GRX sruff, so I know it works out.)

GRX stuff is all but impossible to find now, but I am not in a hurry.
