2x hybrid bikes
I notice the trend now, with the exception of road bikes , coming with a 1x system. This is especially noticeable with hybrid bikes.
I use hybrid bikes for exercise and always like to be at a cadence of around 80-85.
so 1x system isn’t ideal for that , because cassette have large jumps, how do I get around this ? My ideal bike would be 2x hybrid with shimano 105/ or something like GRX .. but they don’t exist anymore

Change the cassette to get a better gear ratio that will give you a better cadence. I did that on my hybrid by running a 12-25

Check out the trek FX2, built a couple of them recently and they seemed like a solid value for a general fitness/commuter style hybrid.

Most of the 2x hybrids also have/had ~15% jumps on the cassette just like the 1x. The cassette gears are the same, they just add to the sequence (9x 11-32 becomes 10x 11-36 becomes 11x 11-42 etc). The rare exceptions were flat bar road bikes made with road bike groupset parts, especially in the Sora-Tiagra range. Even with those you are going to get the “endurance” long cage version and not a corncob, though you can do what jaxgtr said

I have seen plenty of 2X stuff still from bottom end junk to decent mid-range stuff plus I see plenty of parts available for 2x set ups and plenty of excellent candidates for a good frame to build up whatever bike you desire. To say that 2X hybrids don't exist is not true or close to that. Yes there are a lot of 1x bikes these days, my hybrid is a 1x which I built by choice from the frame up it is a 1x9 and is just fine but a 2x or 3x is also fine too depending on your needs. However todays 1x stuff can encompass a bunch of riding styles and doesn't have to just be limited to wider range cassettes however that is generally more practical.

Yep. I have 2 cassettes for my 1x cyclocross bike. One for the hills/gravel/single track, one for the flatter road sections with typical road gears.

I wouldn't abandon the idea of a 1x. I went with a 1x gravel bike (Jamis). The bigger gaps are just not that noticeable to me, most of my riding on that bike is rail trails, and at most rolling hills. I'm not pushing the low gear end.
The most notable has been a need for higher cadence in the highest gear, but you seen to like the higher range anyway.
