I would suggest tires. If you have a favorite grab a couple extra sets because you never know when they'll "improve" them with concomitant increase in price; then the one you like goes poof.

Indeed and some tire sizes are no more made such as 700*19, 700*20, 700*21 and 700*22 for road bikes and same with MTB you rarely if never find 26*1.75 but you still find 26*1.8 at Hutchinson and there are fewer 26'inch tires for vintage MTBs in terms of choices in bike shops but more for sale online on the well known onlineshops.

For press-fit bottom-brackets, you could stock up a set of the right tooling. Not every mechanic will keep every type of tooling around. It can be safe to have a set of your own so you always have options to fit a new bearing set.

Luckily my Habanero has a BSA threaded BB. Even an idiot like me can change it out.

I feel like there will continue to be motivation for some company somewhere to keep making parts and components like freewheels and rim brake calipers etc for a long time. My concern is, will it be "nice stuff"? In the case of something like 9-speed cassettes (not really C&V), I'm not sure. Right now, Shimano and SRAM both offer XT-level versions, and for that I am happy. I also need to do some stocking up.

Fun fact: a 1923 Sturmey-Archer Quadrant shifter will index shift a 2023 Sturmey-Archer SRF3 hub.
