actually this is going to be a a bit tricky. We have ridden together and she keeps up on a hired mountain bike with big knobbly tyres whilst i'm on my super fast road bike. when she starts to ride on a road bike I might not be able to keep up. Maybe I should delay the purchase until I'm back to my previous super fit status.

Have her ride an old heavy trike with a dog in it. She will like the dog so much she will not care about being slow. Of course this will eventually make her stronger. Maybe not such a good idea.

There is absolutely nothing wrong with riding behind your lady friend. If she's faster than you, it might even lead to an increase in YOUR riding abilities...
