I've always viewed bikepacking as a form of off-road touring, whereas most of the people appear to be just traditional bike tourers.

I thought the same thing and concluded that whoever wrote the piece used the wrong term or that it "bikepacking" means "regular" touring wherever the author is from.

I was pleasantly surprised to see that it was someone who actually can be considered an "expert".

And contrary to some opinions, the LHT was the most popular bike.

I was surprised by a couple of unique bike setups (assuming they are not just graphics for the sake of being graphics). For example, the tandem with one rider, the penny farthing, the unicycle, the "racy" recumbent and the cargo bike (one of the families). I am also uplifted by the number of older persons (50+) in the "list": I'm 55 and likely won't be able to embark on any significant tours (world tour is not on my list) of at least a couple of months in duration for about 10yrs.

Opinions on whether it is the most popular? That sounds about right for the US at the very least.

on the linked page, I saw a couple of interviews, but in the entry blurb, they mention that they interviewed the 100 and whatever tourers. Are the interviews up on the site, I've looked quickly at the page but didn't see a link to them-am I being unobservant?
