Have:
A pair of wheels. Campy Lambda silver clincher rims in sort of a rounded V shape. 32 spokes. Shimano 600 hubs, HB6400 front, FH6401 rear. Rim tape. 7-sp HG cassette, largest cog around 21t. Excellent condition.

Want to trade that for:
A pair of wheels, single speed with flip-flop hub, preferably something conservative looking (like, not a deep-V with pink paisley pattern).

How about soda then?

Point being, you just need an aluminum can. Cut a strip out of one and, voila, you have your shim.

I couldn't find a 26.0-26.4 mm shim, but supposedly you can use a soda/beer can for one. My bike shop was reluctant/unwilling to do this, so I bought another stem with the proper size clamp. Plus I found that I needed a stem with 100 mm reach anyway. One of the local shops here has a beautiful old Cinelli handlebar with 26.4 diameter for $30 and I would have bought that if the reach had been correct.

I also like you LBS would rather use the correct size stem instead of shimming a pop can.
