From what I remember living in BenNeLux, snow wasn't much of an issue. Or do you go riding on those rare snow days?
I think all of your tires are basically the same. I don't agree with the reviews at all (strongly disagree actually). Don't over think it, follow your heart (and what is in stock).

I'll be doing a mix of bad roads, gravel, cobblestones, hard packed dirt and need confidence in the corners (especially under wet conditions) and the SS seems the most suited for this. Reviews are very good overall,.

Just a quick question: is there any reason not to use Stan's race sealant with a gravel bike? This is what I use in mtb and it has the particularity to have big crystals inside.
Edit: I ordered the Panaracer Gravelking SS in 38mm (front and back), I'll let you know when I receive them (should be the end of the week). I'll mount them on my stock wheels + stan's race sealant.
I went to the place I should ride the most (Forêt de Soignes). Here are a few pics. I hope these tires will do well

I do like the concept of the SS, I'm thinking they would have similar breakaway characteristics as the SK, (and much more gradual than the slicks).
My feeling is that the G-One all round would be great for those wet cobbles. I dunno, those little kubbs give me a lot of confidence on hard sketchy stuff (especially wet).
Stans is fine. you are familiar with it, so that will work great. I use Orange seal - no stanimals or any clumping with that, although it does coat the tire with dried latex. Presumably the orange seal endurance lasts longer (although there are versions that will plug bigger holes easier).
