Nice paint job and colors!
I prefer the brake cables behind the bars, and the shifters higher on the downtube.
Other than that, time to get it dirty.

For the paint i made a big mistake that will cost a new paint someday.... i used a cheap clear coat and now is very fragile. in a optimistic way when the paint will be totally ruined i have a great excuse to change the look of the bike itself. Also is the first time i used a yellow paint and i think i'm not going to use again since is very hard to apply in good way because the contrast made it looks difficult to know "how much" paint you have already been sprayed in a single point.
The cables i have no idea if they are in a correct way or not but i like in this way.

The cassette is a shimano megarange(MF-TZ500-7)14/34T , is cheap , works well with the deore lx and has a good range , plus with my crankset's chainring 28/38/48 make the bike very versatile.

I'm glad to see you didn't put disc mounts on a classic fork. My gravel bike for a year was my classic touring bike. It worked well, but I had a lot of flats because I couldn't get big enough tires on it so I got a more modern frame.

Have you tried the any type of inner tube's sealant?
i have the dr. sludge tyre protection and trust me thats great!

The only story I can tell related is for the tools, after completed the stem by hands my friend told me I can borrow his dreemel for an easy solution in case I need to engrave again.
That's how I got a metal splinter into my eye for a week, but the worst part is how the doctors removed it. Ps:is you look closely you can see "GG" engraved, those are my name and surname first lecter.

I prefer drop bars for gravel. But I also spend over 80% of my time in the drops vs other positions. Flat bars with aerobars would be interesting.

i'am converting it with a flat bar plus extension. i had to admit the handling is improved a lot in the off road terrain and in the road i can find myself a bit more comfy. Also with the flat bar and 35mm tyre i did not appear as a weirdo who put "fat" tyre on a "roadbike"
