5'8" on a good day; I ride a 54cm Trek. I basically got it on a whim before I knew much about bike fit, so I'm glad to see I fall largely in line with the standards.
Speaking of which, there is an article on bike fit in this month's Urban Velo: https://www.urbanvelo.org

How tall you are (even inseam size) is only one aspect.
Femur length is pretty important if you want decent knee over spindle placement.
From Competitive Cyclist (bike fitting):
"...Most folks rely on the Lemond method for one good reason: it's quite accurate. Over time, though, we became fixated on the two significant drawbacks of the process:
It computes your ideal seat tube measurement and initial seat height based solely on your inseam. Your femur length, however, can play a major role in determining your ability to produce maximum power in an adequately comfortable position. For example, if your femurs are long, you'll need a setback seatpost and a higher saddle position than someone with a smaller bone structure...."

i'm 6' 1", long arms....
pick the bike based on top tube, so have ridden anything between 58 and 60cm seat tubes, as long as the top tube is on the longish side.
Current bike is a 58cm specialized with 58.2 virtual top tube....saddle all the way back in a set back seatpost and 130mm stem....comfy...
And deep drop bars

Height vs. Size
I am 5' 7.5" and ride two frames with a 55 or 55.5 top tube. I am using a shorter stem-100mm and love the fit. Both bikes have a taller head tube ~160 cm. That is why I chose them. Aegis Victory size 54, 55 top tube length, Kuota Kredo Large, 55.5 top tube length. I love both the rides. I don't like a twitchy, tight aero ride. I like to be stretched out a bit, my 54 cm cannondale let me overlap the front tire and created a dangerous situation. If you read the sizes vs. heights, it looks like there are a lot of different tastes out there. As long as you can get comfortable and get your legs into the best position for maximum power, go for it.

6'0", 34.5" cycling inseam
58 cm Ritchey Road Logic with 130 mm stem
59 cm Battaglin MAX with 110 mm stem
61 cm Bianchi 928 with 120 mm stem
They all have different TT lengths and ST angles, but they're all set up exactly the same as far as reach, drop, saddle height, and setback.

I'm 5'11" and I ride a 54.5cm TT with a 12cm stem and 95mm of reach with Shimano brifters.
Whichever bike I choose next will probably be ~52cm TT with a longer stem and Sram brifters.
