The thought you have to use a torque wrench with carbon components is grossly over sold. First, for most bike torque specs, there is not a precise torque range that has to be hit. Most are torques not to be exceeded. So, first use assembly paste to mInimize the amount of clamping force needed. Then, the correct torque is enough to hold it tight, I.e. not slip or twist, without exceeding the max torque spec.

With some experience you can definitely get the feel for this. Use a torque wrench till you do.

if you watch pro tour level mechanics many, if not most, do not bother with torque wrenches for routine jobs.
