Crankset size measurement questions

I'm finally joining the modern world with bike parts but I need a little help on the details.

My frame has a 100mm bottom bracket, but the width with the external bearings measures 129mm
What size crankset to I purchase?
How are cranksets sized?
I've seen some brands advertise sizing via the dropout spacing or chan line.
Are there any absolute measuerments I should know about?

The bearings are 24mm, and I presently have Race Face crankset, but I would like to find a 165mm solution of any brand.

You appear to want shorter crank arms. Raceface has made dozens of different crank models. Which is yours, and from what year? Don't know about now, but Raceface used to make cranks with multiple arm lengths

The Crank generally will determine the spindle length not the other way around but it sounds like maybe this is some sort of fat bike just guessing from the little info provided but in the end you probably might want to take things to a bike shop and pay them to measure and order everything so you aren't getting the wrong thing.

You want a crankset spec’d to fit your bottom bracket shell, and may need to get the appropriate bottom bracket, or spacers to make your new spindle length compatible with the installed bottom bracket.

You have to know what type BB shell you have to pick a BB. Then you have to know if anyone makes a BB that will work with the crankset you want to use.
