Components are easier to change than paint color.

Tried to do this a while back, on the fence between the 105s on a gold bike or the sora on a lovely black cherry paint job. Ordered the soras with the double crank, they delivered with a single crank microshift setup and pointed to the “components may change” fine print and shrugged. So I was forced to take delivery of a nicer bike than I needed and accept a new floor pump as an apology. Alas!
But it looks like you are set now! Congrats on the new ride.

It kinda is a little stupid, sorta, maybe.
I have purchased many, many cars, motorcycles, bicycles, etc second-hand.
Color was practically the least important consideration.
The "bones", condition and price are what matter.
I always eventually got used to the color.

The high and low gears should be the same between groupsets, with an additional step between them with the 105. I'd go with the color I like and live with the groupset that is nearly identical. Then upgrade down the road if I absolutely couldn't handle that one missing gear.😁

No judgement from me. Canyon had a bike that I liked except for the color, and I didn't buy it for that reason. Frustratingly, they had another bike with the same frame, but in a better color, and with lower spec parts. (I asked, they wouldn't do a custom build.) I very nearly bought both so I could swap the parts and sell the one I didn't want. I ended up buying something completely different, but I often wonder if I wouldn't have been happier with that bike.

I bought this frame in second hand because it was red and handmade in the USA, changed the seat post and the stem, stockpiling the dura ace 7800 parts to make something special of it

I find the lower tier bikes are almost like the slums in Brazil, brightly painted to take your attention away from the reality. Get the better bike that works better in the end you will care more about that then the color you probably won't notice as much while riding. In the end though there are a tons of different brands offering similar products in different colors so if you want a nicer bike with better color for you try another brand maybe.
