For either a rear hub or fork steerer, the threading between Italian and ISO is similar enough that you can really use either standard -- as long as you don't go back and forth between the two. So, for headsets, the real difference between Italian and ISO is the inner diameter of the crown race. ISO is 26.4 and Italian is usually 27.0.

The text in the image you're showing reads 26.4. So I'm not sure why they're calling these "Italian."

It's pretty easy to mill a fork crown diameter down 0.6mm.

the difference betwixt fity-five degree and sixty degree

any trick to tell if a steerer’s already been switched over? maybe by backing off if gently threading meets resistance?

if not, I suppose just committing to ISO would be the safest bet.
