I rebuilt my first carburetor in 1971, a simple Ford 4bbl. In 1990 or so my friend and I would joke about how we could do a Quadra-Jet blindfolded. We never did, but we could have. The last GM cars with carbs were around then and trucks were all injection in 1987. At the dealer we stopped accepting them for repair around 2000. I would do small repairs to carbs but no more rebuilds. Too much trouble and people had unrealistic expectations, (largely due to service writers lies).
A different time from diagnosing electric cars and cars with 30 on-board computers all chatting with each other.
I estimate conservatively I serviced 30,000 cars in my last 20 years on the job. Could have been closer to 40k.

Here the 1982 and above cars with carbs still have to pass the IM240 test, which is loaded a dyno test taken from the Federal Test Procedure certification test. It's 2 miles, 240 seconds, and hits 57 miles an hour. Feedback carbs, Jeep Grand Wagoneer's, Honda's, they don't discriminate. The standards are tight for them, but a walk in the park for injected stuff.
Funny. Self adjust drum brakes, disc brakes, now electronically controlled parking brakes... ADAS. Carbs to injected to direct injection... Like you, I've seen things man...

Today's ride was windy AF, and therefore cool, so in 58 miles I only drank 2 bottles. But let the temps go over 80 and I sweat like crazy.
I love these Sunday rides, because there's enough different parts to it that no matter which of 7 bikes I'm riding, there's always some point at which I find myself thinking, "Oh my god, I ****ing LOVE this bike!!!"
