Here's the Dad Cruiser with a couple of improvements. First, I installed a nicer townie bar. Second, I straightened out the fork. So of course I had to take it out for a test ride, and it was snowing by the time I got out.

Not too far. I had just finished working on it, so of course I had to take it for a test ride. There was only a couple inches of snow on the ground by that point, and it was the stuff where skinny tires just cut through to the pavement.

I know that the wheelset that I used (Retrospec) is not held in any regard whatsoever. That said, it was the least expensive orange-painted wheel with a sealed bearing that I could find. $99 with tires.
As I stated earlier--my goal was to have a "creative" winter project and (re)learn my way around a bike--and NOT spend a ton of dough doing so. The bike is not destined to be a daily rider--I have 4 others already.
Handlebars: Nitto $36
Stem: OE SR
Brakes: Tektro 559 $45
Levers: LBS parts bin Weinmann $25
Wheelset: Retrospec w/ included Kenda 25C $99
Crankset: IRO 70mm 46T $38
Pedals: LBS parts bin Pista-style with Christophe cages $10
Seatpost: Cyclist Choice SP243 $10
Saddle: OE
I did drop the seatpost about an inch from the photo. I have 36" inseem and a 7' wingspan (38" sleeves). The bike "sits" pretty comfy. But it's snowy and cold in the land of Cheese and Beer. No riding for a while yet.

I see one change that I would make. To pull things together, I'd either run silver/grey cable housing to go with the chain, OR a black chain to tie in with the black cables. Either one would also make it slightly faster. I lean towards the black chain because of the hubs, spokes, and the black border ribbon on the chain stays.

What sort of arrangement do you have for your front brake?
I have always wondered considering the SC pista isn't drilled. Compression wedge type deal in the steerer?
