SS Gravel/Trail Wheelset Recommendations
Currently riding a Cinelli Tutto fixed gear on the road, but am interested in taking it off-road on some light trails. I'm currently riding on Velocity Deep V's which probably take a 28mm tire max, and looking at going with a 33-35mm for gravel riding. Looking for suggestions on a good value wheelset (canti brakes) that can handle wider tires, robust, and won't break the bank. Maybe something along the lines of a H Plus Son Archetype?

I've ridden 40c tires on velocity deep v's through snowy conditions with no issue. It's a myth that you need a wider rim for a wider tire. The other way around is a huge nope though.

My rim brake SS CX bike has a pair of good old Sun Rhyno Lites laced to Surly hubs. Dirt cheap and bombproof for years. I run Gravel King SK 35s.

A couple things:
I have run up to 42mm tires on Deep Vs on my tandem. Ideal? No, but it was fine.
Modern rims with wider profiles will let you run lower pressure. Archetypes are great.
I build some SS wheels with some Kinlin XR22T rims and they have been awesome with 38mm cross tires. I bought the rims here
Kinlin rims with 45mm tires:

For my Schwalbe Marathons I would do between 30-40 psi for extra grip in the snow. Summer time they'd go back up to around 70psi. Gravelkings, I go 40psi at the lowest in the winter. For reference, I'm 160lbs as well.

H Plus Son Archetypes are great rims. For my SSCX bike I have three sets of wheels with DT Swiss R460's laced to Surly rear hubs and whatever nice QR front hub I found at the time (White Industries, Stans 3.30R, etc) and run 33-38mm tires depending what I'm doing.

My setup is quite budget: I'm still riding the same Alex DH19 rims that came stock on my 2016 Cross Check (singlespeed now), current tires are good 'ole Nano 40s, have had 42 Knards on there as well. I ride this rig like it's a mountain bike - it really takes a beating--no complaints. Definitely won't break the bank.

I really like Velocity Dyads or Mavic A319 rims with what ever hub works for you. Here is my wife's Raleigh Mixte with 105 11speed hubs and Dyads

I think all the Velocity beefy rims should fit the bill. I have A23's on my commuter, and the Cliffhangers look pretty solid. I went with DBSwiss on my tracklocross, but it's brakeless at the moment. R500 with Surly hubs; I think it cost about $250 to have it built. The front wheel I got on ebay, so that's another option. Mine are 650b, but 700c should be more available (and possibly less expensive) on ebay.
