Made my decision
After much back and forth, test rides, Google searches, etc I have decided to get a used Tarmac.
The bike is a 2011 Tarmac Elite. It has been built up with all Ultegra groupo, shifters, cranks, brakes, etc. It also has a really nice set of Pavia wheels, carbon cages, and great pedals. I am at the top end for this bike, $2,000, but I think the build and extras justifies the price.
How did I do?

was going to be my choice til a NOS 2009 Tarmac Expert was pretty much handed to my by one of the guys that runs my LBS. Only paid $2000 for that so it was a no brainer for me, but had that opportunity not shown up it prob would have been the Elite. Good choice

Got it today, got shoes, figured out the speed play pedals, and went for a short ride. Need to make some adjustments, but overall a very comfortable bike!!
The Rova Pave SL wheels might have to go sooner than later, and new tires aren't far away.
Tire suggestions?

Until we see pictures I'm saying you did terrible. Once you post pictures I will change my vote to you did great. 
Tire suggestions are pretty much always Continental 4000S's. And go with black. Colored tires suck!

Or, you could go tubeless. Only way to go IMO. Havent had a flat (other than a huge rip in WAY overworn tires, once) in... 4 years now. Oh, the ride is fantastic
