What is wrong with me?
I have been having hand weakness and numbness in my pinkies for the past couple of months. It must be my bike fit, but I haven't done anything different. I have had this bike since 2006 and done many miles and never had a hand weakness issue. After a long ride I will be unable to do even basic tasks with my hands they are so tired and weak. It is affecting my grip strength for days after a long ride. WTF?!? I have a century ride in a month, and now I don't know if I will be able to do it.

You should go see an ortho that specializes in hands. I recently experienced numbness in my pinky for about 1.5m went to see the Dr. They did a nerve test and found compression at the elbow (cubital tunnel) and wrist (guyon's canal). After staying off the bike for a month and sleeping with a splint that kept my arm at 70 degrees I saw no improvement. I am now slated for endoscopy on 8/30 to free up the nerve. Dr says this is generally 80% effective and recovery time is about 2-3 weeks. Note I have been riding for 5 years with the same fit and no problems, so it happens.
BTW the problem with compression at guyon's is very typical in cyclists and is even called cyclists palsy.

I know it is the ulnar nerve causing the numbness in my pinky, but that doesn't explain the weakness in grip strength. I can't even button my own pants after a long ride. It primarily affects my thumb and index finger.

Numbness is one part, the nerve affects both feeling and inervates the muscle. Blockage may affect just feeling, muscle strength or both. If your having problems with your thumb and index finger that is the median nerve compression or carpal tunnel. It is possible to have compression in both nerves from riding. I will on occasion get median compression due to my hand position in my right hand. But moving hand position makes it go away and it never continues after I am riding. Get it taken care of because long term compression can lead to muscle damage.

Could well be. I had a trapped nerve in my neck a few years ago that rendered cycling impossible due to the pain. All the best for your recovery
