A stupid question I haven't seen asked anywhere before

If you aren't sure how many gear inches you prefer couldn't you get a road bike, keep it in a gear for a day or two to see if you like it and let the mechanic get the numbers off what gears you are currently in?

Yes, or do it yourself- just count the teeth on the cog and chainring you use, and plug it into the Rabbit

Yup, count the teeth if you don't have them memorized already; then plug into either the Rabbit application or use www.sheldonbrown.com/gears

Because of the bit of slack due to the derailleur, your fixed gear ratio will probably be a little bit different.
