I use now the now defunct and discontinued... Speedplay Frog pedals and cleats on my Gravel and Road bikes with Shimano mountain shoes for gravel and Pearl Izumi mountain shoes for road. Flat pedals and hiking shoes for my mountain bike.

Although I have road shoes and pedals for my three road bikes, my gravel bikes have MTB pedals, and if/when the road pedals or shoes wear out, I plan to switch to all pedals with 2-bolt/mtb cleat compatibility and good quality MTB shoes (currently Sidi Dominator). If you have both at this time, go with MTB.

I like SPD pedals, they are simple, the cleats are long lasting, there are countless shoe options, including shoes, boots, and sandals which are useful for walking and cycling.
My favorite pedal is the Shimano XTR 9120. It’s light, well made, and has a big platform which is large enough to allow you to ride with regular shoes.
