bike wing sail

I watched a video of a man in France with a sale board like wing mounted on his bike. He was able to sail up and down the beach in the wind trying to find one for myself

This sounds like a real challenge to controlling the bike. Rear only wind might be OK but stopping and starting could be as challenging as getting on a tandem for the firs time.

The secret is that you don't do this on roads. You need the ability to take a wandering course completely dictated by the wind strength and direction. I've done skate sailing where you sit the long beam of a huge kite on your shoulder and hold the cross beam parallel to your body, from ankle to overhead. You lean on the sail and the whole package, you plus sail, into the wind. When the wind lets up, you swerve toward it. Puffs, you serve away. Works fine on an open lake. (And it is very fast. My dad was very good at it and was clocked by police radar at 60. I've done an undocumented 45 (based on how easily I dusted the best local hockey players when they dropped their pickup game and raced me. Massachusetts. Hockey country. Some of them can skate. 30 mph isn't unheard.)

Edit: The secret to speed is crosswinds. When I used a Zzipper fairing in my midwest days every once in a while I got to do long stretches with crosswind. I'd lean the bike into the wind and use the fairing like a sail. OMG fast! Much faster than going downwind. (Think glider vs parachute.)

But if you can ride fast enough, every cross wind is a head wind. Apparently.

Yes, if you are an aerodynamic drag. But it's a whole different world for shapes that create aerodynamic lift. Think sailboat. When pointed roughly 45 degrees away from dead upwind, they sail along quite nicely in this (bicycling world) headwind instead of drifting backwards.
