Putting 700c wheels on a old frame that had 27" wheels
Beside the 126 mm rear spacing issue, what issue will I have with putting modern 700c wheels on an old frame that normally had 27 inch wheels, will they fit?

The distance to the brake hole will increase 4mm, which needs to be accounted for in the "reach" of your calipers.

An expensive option is an offset "drop bolt," which will allow you to use calipers with shorter arms. However, every 1960s or 1970s bike I have owned had long enough brake caliper slots to accommodate both sewups (700C rims) and clinchers (27" in those days).

They'll fit, brake issue mentioned above. I'd just get good quality calipers with long enough reach, try harriscyclery. That and you'll have a bigger gap than otherwise on the brake bridges.
