Ouch...
I have been riding a Dahon MU D10 with the 20 x 2.0 standard tires that came with it. I just put on some Rolf wheels with 20 x 1.10 Durano tires. I now have a bit of a gearing problem in that I am spun out a lot more---Smaller tires give a little lower gearing and the rolling resistance is way down.
Not the only thing that is lower. My pedals are lower also---close to 1/2". A trail I take nearly every ride a block from my house has a rock kinda hidden in the grass. I have never clipped it with my pedal until today. First ride on my 1.10 tires and I nailed the rock hard enough to toss me off the bike into the grass on the other side.
Minor road rash but what a wake up call---I about knocked myself out.

I have over a dozen bikes---just fooling around.
I am playing with this bike to make it as light and fast as possible. I have never played with tubeless before this either. These were my first tires set up as tubeless. Kinda fun. I want to ride with some friends that are riding 700c bikes and looking to see if this will keep up. And see if I can keep up.
I quit riding road bikes in about 1988 when I got my first mountain bike. I have been almost exclusively riding fat tires ever since.
I now remember how much better I like riding fat tires from skinny ones.
However these tires/wheels really roll fast.

Fast roll = hard crash. Is digging up the rock an option? Depends what you call rock. If it is a solid piece of Mother Earth you may want to leave it alone.
I am getting old so I keep my speed down.

Or, being that you know where the rock is, just go around it.
Are you getting any other pedal strikes?
