FYI R7000 105 CS-HG700 11-34 cassette

I spent a couple hours going in circles after moving a new bike's 105 11-34 cassette to a different rear wheel. I didn't realize there was a spacer ring on the original wheel hub. As a result the cassette wasn't tight enough and the rear derailleur shifting was totally wacky. It wasn't until I used a micrometer to measure the hub length on both rear wheel hubs that I found the spacer. So if you try and install a CS-HG700 11-34 cassette on a road hub you need the spacer (same size as 10 speed). If you install the cassette on a mountain bike hub you don't use the spacer. I think this is the only Shimano cassette like this. I think the new 8000 Ultegra 11-34 is normal.

Yes...

A feature that Shimano introduced with the large sprocket cassettes allowing them to be used on 10s hubs.

And, most MTB freehubs still use 10s compatibility.
