I had a part carbon trek 2120 and it didn't ride too pleasantly. I'd say an early Kestrel full carbon bike would be desirable. An ex girlfriend had one (a 4000) from 86 I believe with 6s DA.

Here is mine. Rides like magic carpet, but way too whippy....tire rubs on chain stays when I am out of saddle. I think the Trek is better for out of the saddle and big rider.

Here's my personal take on what a collectible CF bike is:
My 85 Vitus Plus Carbone 7.
Some say I'm crazy to ride such an old glued up CF bike these days as many think that Vitus bikes with their glued together construction and aluminum forks are dangerous.....but I think they're all wrong and missing out on these nice bikes from France. Plus these bike represented the end of an era for French bicycle production and are significant just for that.
The ride on the Carbone is so stable and plush at the same time. So far I'm loving riding it more than my steel Peugeot PSV.

I'd put an early Aegis on the list. They were contracted by Trek for some of their first carbon frames (according to their website), and I think I read somewhere that Kestrel was started by some of the Aegis people who left to start their own company. I've got a sorta early Aro Svelte...not sure of the year and have never made an effort to find out. It's got a 1" head tube but I've got a 1" threadless fork on it (still have the threaded fork too).
They went out of business not long ago and most of the employees now work for Argus bikes. I've got bikes of all sorts, including steel, aluminum, titanium, and carbon, and the ride quality is pretty similar on most, but the Aegis is noticeably smoother than any of the others. On 23mm tires it feels at least as smooth as my steel touring bike on 32s.

Miyata made a very nice CF bike, does anyone have one of those? Miyata's seem to be getter a lot more collectible in general, as of late.

One with Campy 50th sold on ebay recently for $8500:
I saw one of these frames (sans Campy C-Record) up close and personal. Guy collects early carbon fiber bikes (Y-Foils, Looks, and so on). Sold me two Masi bikes because his interest has moved on to carbon fiber. He also had some other uber-rare Look(?) TT bike. I could tell by his face it was worth something, but as much as I tried to pay attention, I was more focused on the Masi bikes at that point.

That's an odd one....an ALAN framed Peugeot??
......but I guess the 90's were kind of a weird time for Peugeot with French components suddenly out of the scene. CLB/Vitus was still around with aluminum and carbon frames, so it is weird that they would go to ALAN for this one.
The frame shown looks to have been used hard and put away wet, but could clean up nicely.

I just seen a trek 2100 or 2200 part carbon fiber at a garage sale last weekend for $150 or obo. Should I go back and see if they still got it and buy it?
