Is this progress?
I used to have to always breathe through my mouth no matter what I was doing, let alone any physical activity. Then the other day I noticed on a ride that I had my mouth shut and I was breathing just fine through my nose, on a pretty intense ride. So... could this be attributed to just being in better shape from riding so much for the past 5 months- or what?

My theory: I was just in ****ty shape before and was always gasping for air (not really gasping, but I needed more air) and now that I'm in better shape- I'm not trying to suck it all in as fast. Does that sound plausible?

I would tend to think it's more a difference in how open your sinuses are. And it may be that you're not used to trying to breathe through your nose when working out, and just hadn't thought to try.
You may "gasp" more when you're out of shape, but you probably actually breathe more air (at maximum) when you're in shape- bigger heart, better lungs, and all.
