Tires for Touring-Gotta question
Here is my situation. We are touring this Summer and I ordered 32mm GatorSkins with a folding bead. The problem is they do not appear to be available yet. In the event I cannot get then I need a recommendation for a good substitute.

Vittoria Voyager Hyper, 350g. Used to be called the Randonneur Hyper. For tandem use, maximum sidewall pressure is frequently an issue. Vittoria doesn't give that in their tech table. Panaracer doesn't give that for the Pasela either.

The Tour Guards . . . very puncture resistant and folding Kevlar bead.
Got about 2,100 miles on rear of our tandem and one puncture.
We live in Arizona, so lots of road debris, cactus thorns and a few goatheads.

We used 32mm Pasela Tour Guards in Eastern Washington which is loaded with goatheads with no problems.

We run 32mm beaded Pasela TourGuard (i.e. with the Kevlar belt) for over 3000 miles on our vintage tandem. We run them a little above the rated maximum of 95psi. No flats so far. I replaced the rear recently when the tread started looking thin.
Most of our riding has been unloaded (except for lunch and odds and ends), but we did one heavily-loaded 1-night camping trip. Most of our riding has been on New England's roads which were first paved right after the Revolution and then patched up after Grant returned home from the little disturbance in the mid-1800's.

We're going to Ireland this summer for about three weeks of touring. Last week took off our 28mm Gatorskins and replaced them with a set of Schwalbe Dureme Tandem 40mm on our Seven Axiom 007. We're running 75-80 psi and have about 100 miles on them. Stoker absolutely loves the ride on the chip seal roads. So do I. It's a tremendous difference. Not cheap though.
We took to heart a bit of the Blayley's blog https://blayleys.blogspot.com/about their Seven when building ours so it will probably fit wider tires than you're looking for.

Well I ordered and received Schwalbe Marathon Supremes 32mm folding. The other day I took the 28mm GatorSkins off and installed the fenders and mounted the tires. So far everything looks good. Weather has been crummy so we have not had an opportunity to ride them yet.

I'll be interested in your report. We tried the Marathon Supremes and were really disappointed - felt very sluggish compared to the Paselas or Gatorskins.

There's a big difference between touring and the Saturday morning ride for most folks. Slower by a mph or two doesn't really matter for most tourists.

But why accept an inferior tire if better ones are available? I'm saying that <for us> the Supremes are not a good choice compared to Paselas or GP 4-seasons, or gatorskins for that matter (though we had sidewall failures with the latter like many others here). We do both touring (mostly not loaded, but sometimes loaded) and Sunday (!) morning rides. The OP asked advice, we gave it.

The Schwalbe's and the Pasela T/G's are both really excellent. If must have the ultimate degree of flatproofing, the Schwalbe Marathon Plus's are the ticket. The Pasela's in 43mm or 37mm make a great rear touring tire. I am single bike touring on a set of non-folding 43mm/35mm T/G's and carry a 37mm kelvar bead spare.
