I've got fat road tires on my Ritchey Breakaway Cross bike currently, Pasela PT 32s. However, I have a second wheelset with 32 mm Ritchey cross tires that have more tread for offroad use. The Paselas are fine for unpaved roads and trails as long as the surface isn't too muddy or rocky. I previously had some Rivendell Jack Brown 35s on the Ritchey but they got destroyed when a large rock gashed the sidewalls.

On my Double Cross, I run Schwalbe Land Cruisers (700x40) when there is significant single-track in the forecast, else I slap on a pair of Maxxis Columbieres (700x32) for the road. Once I wear out the Columbiere's, I'll probably spring for some Barlow Pass (700x38) or Soma Supple Vitesse (400x42) tires to have one tire that rules them all.

I really like the 28c Conti 4 seasons for road tires on my Axis. Do fine on dirt roads as well, though sub optimal on messier stuff.

And finally got a 2nd wheelset so I can swap between the slicks and knobblier tires easily. I'm really liking these Conti Mountain Kings as well.

The people who say that a cross bike won't work on the road are just being typical internet contrarians/know-it-alls/snobs. If Jeremy Powers and Stephen Hyde can train on the road on their cross bikes, then I'm pretty sure the average guy on the internet can, too.
I have a 2011 Ridley X-Ride that's a bit on the twitchy side, but it's more than passable on the road. I haven't put slicks on it yet (I have a set of 25mm Mavic Aksions waiting for the spring/summer and some crappy Kenda 35mm hybrid tires that will go on soon). I've ridden it on knobbies on the crappy local roads around here and it's not remotely alarming. It'll be a nice backup roadie on the 25's for the summer. Right around 20 lbs, stiff and fits me like a glove.
I'm coming from a converted Diamondback hybrid that had really slack geometry, so I've only ridden the Ridley on file treads and knobbies.

One of my buddies has a RX-10, also, same colors. He is running Vittoria Voyager 35s. Not quite as fast as a Gatorskin, but can run lower pressure and really good ride quality - about equal in flat protection.

Older post but I'm just catching up as my 1996 Bianchi steel CX geometry is same as my 3 of my 4 bikes/3 vintage (though the '86 Trek has really long trail at 62 mm, others are in the 56-59 range). Main difference is BB height, but that gives me more pedeal clearance on turns on the CX with 35 road slicks! That sucker sticks in the turns like a Moto GP with all the rubber on the road. Straightline speed is same, too, only it takes longer to spin up those bigger tires (340 grams) on Open Pro rims. The smooth ride of big tires can't be denied. However, the bike-turns-with-my-head steering is a little slower with big tires at lower pressure. Will soon have the new Soma Vitesse 38s on the CX; they weigh only 270g in the Super Light version. Run it with the 35 slicks on woodland single track at lower pressure and had a blast!

Conti 4 Season is a great tire, ride quality just a notch lower than GP 4000s. I've run 25 mm GP 4000s for years, very rarely ever get a flat (I do some gravel road sections on them, too) until the rear tire tread is near the limit, then flats tell me it's time to change, much like any tire. One of my buddies runs 28mm GP 4000s on 25mm wide rims, tires measures a shade over 30mm wide!
As for the Vit Evo, it is an event tire. Very soft rubber gives great traction but also cuts easily. One buddy races on them. Another tried as a regular tire, love the ride and handling, but could only get 800 miles out of the rear (yes, he ran proper pressure for his size). After going through 5 Vit Evos he came over the Conti GP 4000, too. He said Conti has just a bit less feel, but is just as fast and longer lasting.
I've gained a bunch of weight the past year but I can still get 1500 miles out of a GP 4000 rear! Important to me is the Conti's great wet pavement traction. Confidence inspiring on wet mountain roads.

the past year, I rode my All-City macho man disc on the road and on gravel, with different tires. There were compromises, of course, but not much. It really got me thinking that I only need one bike for riding stuff like this, although I would prefer 2.

Just put these Conti Gatorskins on last week. I've only put about 15 miles on them so far, but I like them. Much smoother ride than the Schwalbe Rocket Rons I use off road.
