What's your favorite XC racing tire? 29", tubeless, 1.9"-2.00" width or so. Thanks!

I'll start. I do not race, but I ride 75% on the street to get to 25% of fireroads and trails on XC 29r.
I never put the bike in the car and drive to a place to ride.
Right now riding Vittoria Mezcal 2.25in. TNT G+. They also com in 2.1in. They have good flat resistance.
Rolls good and fast on asphalt and enough bite for my dirt riding. 30-35lbs tubeless.

Because asking me about my favorite 1.9 - 2.0 mtb tire is like asking me about my favorite smelling fart.

Plus the OP gave no indication of the terrain or riding style.

What little XC racing I did was 7-8 or so years ago on old-school East Coast rocks and roots. I used Racing Ralphs (2.4/2.2 front/rear). Snakeskin casing. Not sure if they even still sell these, and they are way bigger than what the OP is asking for. And I ran them with tubes. So basically nothing the OP is interested in. So I stayed quiet.

There are so many reviews available via google search on all types of mountain bike tires. Read the reviews, buy some tires and try them out for yourself and find your favorite for your riding style and your terrain.

Racing Ralphs are still made. I have a set of 29 x 2.35 on my Niner hard tail.

For actual racing, I would look for strong, light tires. Hope you have a deep wallet! Most tire companies make race-grade tires, I currently prefer S-works and Maxxis, opting for the tread profile designed for my conditions.
